Chunky Eggplant Red Pepper Dip


I was going to elaborate on my whole "cacao/sugar free" diet, but after yesterdays long post and being busy today, I've decided to post a recipe instead.

Today I made a chunky eggplant dip that is quick and easy to prepare. I've made this dip many times for a client I used to chef for. I like to eat it in romaine lettuce leaves with tomato slices, or in celery. It would also be really great in a sprouted grain wrap with veggies and sprouts.

Chunky Eggplant Red Pepper Dip

2 eggplants, peeled and diced into 1-2" pieces
1 red bell pepper, diced
1 small red onion, chopped small
2 cloves garlic, chopped
Extra virgin olive oil
Himalayan salt, to taste
Ground black pepper, to taste

1. Toss the veggies with enough olive oil to coat lightly, and sprinkle with salt/pepper.
2. Spread evenly on a baking sheet.


3. Bake in a 375F preheated oven for 20 minutes. Check on the veggies, pushing them around and then bake another 8-10 minutes, or until the veggies are soft.


4. Roughly mash the veggies with a potato masher. Add another drizzle of olive oil.
5. Chill before serving (but I like it warm too).

  3. Hi Heathy, Looks good.
    I'm currently feeling extremely sick. Extremely. I have been sitting on the toilet nearly all day. I cannot move my bowels. I'm straining..a bowel movement is there, right ready to go...and just as I think its about to break...nothing..dear god, its horribly uncomfortable. I'm getting pains in my ribs (stitches) and in lower back. It has been 4 days of complete constipation. I have been eating as "normally" as possible, except for drinking up 500 mL of "Imagine" beef broth at 4 pm..probably a stupid mistake. I am so so uncomfortable....I know I need to go take a walk, but my body and joints ache...and all I want to do is lie down and move my bowels.
    If I don't go tommorow...I don't know what I will do! I dont' want to see a doctor, because I know they will be zero help.
    How long should a person go constipated like that before going to emergency? I have no idea what to do.
    Did you experience literally days on end, straining and unable to go? Do you have specific meal plan (a detailed day plan) just for a day or two even...I'm despeerate!
    Would love your advice. Seriously.

  4. Hi I used to be constipated a lot, since 9yrs young, now almost 67yrs young, When I drink (ALL RAW..GREEN drinks, fill blender 3/4 full of dark leafy greens, couple bananas and berries(1-1.5 cups), water about 1-2 cups, blend till creamy, enjoy, keep drinking these..)
    I have wonderful, strain free BM's.

    My grandaughter of age 20yrs, went to the emergency room with constipation for several days and abdominal pain and distention..my daughter called me crying. I told her to make a green drink, her daughter ha ha ate it with a spoon, like soup ( with trepidation as she never has seen or heard of or drank a Green drink) but she did start to have a BM that very day....

    Give it a chance, even if it takes a day or two it will Surprise you. After that have a green drink every day, it sure does KEEP ME regular. and I NEVER excercise or walk much. I use a walker to get around with...so Excercise is NOT a pre requisite.

  5. I just made this and it is wonderful! It just came out of the oven and I scooped some out with a celery stick to try - delish! I dont think it's going to make it to the fridge to chill =) Thanks Heather!
